GRANDMA BAROWSKY'S GERMAN POTATO
PANCAKES
 
4-5 lg. potatoes, grated
2 eggs
3-5 tbsp. flour
Salt and pepper to taste
Finely chopped onion, if desired

Wash and peel potatoes; use fine side of grated and grate all potatoes into a bowl. Add eggs and onion and mix well. Add salt and pepper; add flour, 1 tablespoon at a time, until the batter thickens to consistency of regular pancake batter. Fry in skillet with hot oil; brown on both sides.

You may cube the potatoes and drop into blender until a thick liquid. Add all the other ingredients and blend again for a few seconds. This way is a lot faster and the pancakes are just as delicious.

This is an old recipe handed down from generation to generation in Debbie Gauthier's family.
