ZUCCHINI BARS WITH CREAM CHEESE
FROSTING
 
2 c. sugar
1 c. oil
4 eggs
2 c. peeled, grated zucchini squash
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 c. chopped nuts
1/2 c. chopped maraschino cherries

Combine sugar and oil in large mixing bowl; mix well. Add eggs, beating well. Stir in zucchini. Combine dry ingredients; add to egg mixture, mixing well. Add nuts and cherries. Spoon batter into a greased and floured jelly roll pan, 10 x 15. Bake at 350 degrees for 35-40 minutes until done. Cool and frost.

FROSTING:

1 (3 oz.) cream cheese, softened
1/2 c. butter, softened
1 tsp. milk
1 tsp. vanilla
2 c. xx sugar

Combine and spread over cooled bars.
