VEGETARIAN CASSEROLE 
1 very large onion, chopped
5 cloves garlic, crushed
2 sweet potatoes, peeled and quartered
1 lb. string beans
4 carrots, peeled and sliced
1/2 c. raisins
3 tsp. curry
1 med. eggplant, peeled, diced small
3/4 c. water

Saute onions and garlic in water in a large saucepan, until transparent. Add remaining ingredients except string beans. Cover and saute until potatoes and carrots are tender. Add string beans and cook for 10 to 15 minutes longer.
