APPETIZER SALMON BALL 
Serves 12-15.

The salmon flavor adds an interesting highlight to any hors d'oeuvre table. If you use a food processor, remember how nicely it chops fresh parsley. 1 (16 oz.) can salmon, drained and cleaned 2 tsp. grated onion 1 tsp. horseradish 1 tbsp. lemon juice 1/4 tsp. liquid smoke or smoked salt 1/2 c. finely chopped fresh parsley 1/2 c. chopped pecans

1. In medium mixing bowl, combine cream cheese and salmon. Blend to a smooth consistency.

2. Add onion, horseradish, lemon juice and liquid smoke. Stir to combine. Cover and chill for several hours.

3. When chilled, shape into ball and roll in chopped parsley and pecans. Serve with crackers.
