ALPINE ASPARAGUS QUICHE | |
1 unbaked 9-inch pie shell 1 (14 1/2 oz.) can asparagus 3/4 c. milk 3/4 c. 1/2 and 1/2 1/2 c. finely chopped onion 1 tsp. salt 1/4 tsp. nutmeg 1/4 tsp. pepper 3 eggs, slightly beaten 1 c. shredded Swiss cheese Bake pie shell at 400 degrees for 8-10 minutes. Drain asparagus. Combine milk, cream, onion, salt, nutmeg, pepper in saucepan. Boil and simmer for 1 minute. Stir mixture into eggs. Sprinkle 1/2 cup of cheese into pie shell and place asparagus over cheese. Pour mixture over and cover with remaining cheese. Bake at 375 degrees for 20-25 minutes. |
