CRANBERRY BREAD | |
2 c. flour 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1 c. sugar 1/2 tsp. salt 1 beaten egg 1/2 c. orange juice or juice from 1 orange 2 tbsp. melted butter 2 tbsp. hot water 1 1/2 c. cranberries, cut up 1/2 c. chopped nuts Sift together flour, baking powder and soda. Some flour can be added to the cranberries to prevent them from bleeding while baking. Add sugar, salt and egg. In a separate measuring cup, combine orange juice, butter and hot water to make 3/4 cup. Fold liquid into dry ingredients, then add cranberries and nuts. Pour into greased loaf pan. Bake at 325°F for 1 hour and 10 minutes. Check with toothpick to see if done. |
