CRANBERRY NUT BREAD | |
2 c. all-purpose flour 1 1/2 tsp. baking powder 1/2 tsp. salt 1 tbsp. grated orange rind 3/4 c. orange juice 1 1/2 c. chopped cranberries 1 c. chopped walnuts or pecans 1 c. sugar 1/2 tsp. baking soda 1/4 c. butter 1 egg 1 1/2 c. golden raisins Sift together flour, sugar, baking powder, baking soda and salt into large bowl. Cut in butter until mixture is crumbly. Stir egg with orange rind and orange juice. Then blend mixture into flour mixture. Stir just until flour is moistened. Fold in raisins, cranberries and nuts. Spoon into greased loaf pan. Bake in 350°F oven for 60 to 75 minutes or until tester inserted in center comes out clean. |
