CORN FLAKE MUFFINS 
1 1/2 cups all-purpose flour
1/4 cup sugar
1 tbsp. baking powder
1/4 tsp. salt
2 cups corn flake cereal (Kellogg's)
1 1/4 cups milk (fat-free)
1 egg
3 tbsp. vegetable oil

Preheat oven to 400°F.

Stir together flour, sugar, baking powder and salt. Set aside.

In a large mixing bowl, combine cereal and milk. Let stand for 2 minutes or until cereal softens.

Add egg and oil. Beat well. Add flour mixture, stirring only until combined.

Pour evenly into 12 (2 1/2-inch) muffin pan cups coated with non-stick cooking spray (Pam).

Bake at 400°F about 20 minutes or until lightly browned. Serve warm.

Makes 12 muffins.
