RED VELVET CAKE 
2 1/2 c. flour, sifted 4 times
1 c. buttermilk
2 c. sugar
2 tsp. cocoa
2 sticks butter
1 tsp. vinegar
1 tsp. vanilla
1 tsp. salt
1 1/2 tsp. baking soda
2 eggs
2 (2 oz.) bottles red food coloring

Cream sugar and butter; add eggs. Beat well (sift flour, cocoa, salt and soda). Add food coloring to vinegar. Add food coloring and vinegar to sugar mixture and beat. Alternating, add flour and milk. Add vanilla. Bake 3-4 layers at 350 degrees for 25 minutes.

FILLING:

Cream 1 stick butter and 8 ounces of cream cheese. Add 1 box powdered sugar, 1 teaspoon vanilla and 1 cup chopped pecans.
