ITALIAN CHEESE CAKE 
2 c. sugar
5 eggs, lg. (separated)
3 lbs. Ricotta cheese
Grated rind of orange & lemon
1/2 c. glazed fruit
1 tsp. Strega
Graham crackers

Beat egg yolks into one cup sugar, one at a time, until light and fluffy. Beat egg whites; fold in second cup of sugar. Combine egg yolk and whites; fold in cheese, grated rind, glazed fruit and liqueur. Butter 9 inch spring form pan; line with graham cracker crumbs. Shake off excess. Bake at 350 degrees for 2 hours. Enjoy!
