ITALIAN CHEESE CAKE 
3 c. all-purpose flour
1/2 c. sugar
3 tsp. baking powder
1/2 lb. butter
3 egg yolks
3/4 c. dairy sour cream
Juice and grated rind of 1 lemon

FILLING:

1 1/2 lbs. ricotta cheese
1 1/2 tbsp. flour
4 eggs
1 c. sugar
Juice and grated rinds of 3 lemons

In a mixing bowl, mix together flour, sugar and baking powder. Cut or blend in butter as for pie dough. Mix together egg yolks, sour cream, lemon juice and rind. Add to flour mixture; mix to form a soft dough. Pat out dough to line an ungreased jelly roll pan. Pour in filling. Bake at 375 degrees for 35-45 minutes.

FILLING: Break up cheese with a fork. Add remaining ingredients. Beat until smooth.

NOTE: Any excess dough can be used, if desired, for lattice strip topping.
