COCONUT REFRIGERATOR COOKIES 
3 c. sifted flour
1 tbsp. baking powder
1/2 tsp. salt
1 1/2 c. sugar
1 c. (4 oz.) coconut
1 c. shortening
2 eggs
1/2 tsp. orange extract
1/2 tsp. lemon extract

Sift flour, baking powder and salt together. Cream sugar and shortening until fluffy. Beat in eggs and flavorings. Stir in sifted dry ingredients and coconut. Shape into rolls about 1 1/2 inches in diameter, wrap in waxed paper and chill thoroughly. Cut with sharp knife into 1/4 inch slices, and place 1 inch apart on ungreased cookie sheet. Bake at 375 degrees for 12 minutes or until edges are lightly browned. Makes about 10 dozen cookies.
