MINI CROUTON QUICHES 
10 oz. mushrooms, chopped
1 lg. onion (1 c.), chopped
1 lg. garlic clove, minced
6 oz. (any flavor) Brown Berry Croutons
8 oz. Swiss or Gruyere cheese, shredded
3 oz. jar Hormel 100% Real Bacon Bits
1/2 c. boiling water
1/2 c. St. Regis Blanc wine
1/4 c. finely chopped parsley
1 1/2 tsp. Dijon mustard
3 eggs

Grease 4 mini muffin pans (12 per pan). Over medium high heat, saute mushrooms, onions and garlic in 2 tablespoons oil until mixture browns lightly, stirring often.

In large bowl, combine onion mixture and remaining ingredients. Pack lightly into muffin pans and bake about 15 minutes at 400 or until golden brown. Cool for 2 minutes then remove from pans.

Serve immediately or refrigerate and reheat wrapped in foil at 400 for 7 minutes or warm in microwave. Yield: 48 muffins.

Since microwave ovens vary in power, you may need to adjust your cooking time.
