TURKEY DRESSING (15-18 lb.) 
3 c. onions, chopped
3 c. celery, chopped
3/4 c. butter
1 c. hot water or stock
1 1/2 tbsp. salt
3/8 tsp. pepper
1 tbsp. sage or poultry seasoning
3/4 c. parsley, chopped
12 eggs, beaten
Mushrooms, optional
2 1/4 lbs. bread cubes, dried

Saute onions, celery (mushrooms) in butter until tender. Add liquids, seasonings. Pour over dried bread cubes. Mix well. Fold in eggs, mix well again.
