1 gal. thin sliced cucumbers 2 onions, cut in thin rings and separated 2 bell peppers, cut real thin 1/2 c. canning salt 1 tsp. alum Mix salt and alum, sprinkle over cucumbers, onion, and peppers, stir real good and pack in 10 pounds ice. Every so often stir with wooden spoon for three hours. Drain and wash until you taste no salt. Take out in collander and drain, then put on towel to get as much water as you can out. 1 1/2 c. of 5% vinegar 2 1/2 c. sugar 3/4 tsp. celery seed 3/4 tsp. mustard seed 1/2 tsp. tumeric 1 clove garlic, crushed or 1 tsp. garlic powder Pour over cucumber mixture and stir every so often until cold. Put in gallon jug and keep in refrigerator. Take out and eat as you wish. |
