SPINACH AND VEGGIE PASTA | |
I like this best with thin spaghetti. May adjust recipe to serve more people. 1/4 (1 lb.) box spaghetti (or your favorite pasta) 1 diced small red sweet pepper 1 large diced mushroom 3/4 cup baby spinach 1/4 tsp. white sauce 1/4 tsp. soy sauce 1/4 tsp. minced garlic 1/4 tsp. hot sauce (optional) olive oil, to taste Boil spaghetti according to package directions, be sure to salt the water first. Drain spaghetti. Put to the side. Coat medium skillet with olive oil over medium-high heat. Dice sweet pepper and mushroom. Add baby spinach to the skillet, toss with tongs. Add the pepper and mushroom to the spinach. Toss with tongs. Add garlic, soy sauce, and white sauce. Toss with tongs. Add hot sauce (if desired). Toss with tongs. Put the spaghetti in a bowl and toss with spinach mixture. Drizzle olive oil over spaghetti to taste. Serve hot. Enjoy! Servings: 1 Submitted by: Zach R. |
