PASTA WITH SPINACH AND FETA
CHEESE
 
This is so tasty and fast!

1 (16 oz.) pkg. your choice pasta (I use rotini or ziti)
1 small onion, chopped
2 tbsp. olive oil
1 pint cherry tomatoes, cut in half
1 (10 oz.) box frozen chopped spinach, defrosted
freshly ground black pepper, to taste
1 (16 oz.) tub feta cheese crumbles (Athenos)

Prepare pasta according to package directions.

Meanwhile, in a medium saucepan heat olive oil. Add chopped onion and sauté till translucent. Add pint of cherry tomatoes cut in half for about 10 minutes or until they wilt a little. Add chopped spinach and season with black pepper, to taste. Cook till hot.

Add feta cheese crumbles when pasta is almost cooked.

Drizzle a little olive oil on top before serving... Enjoy!
