LOUISIANA RED BEANS 
1 lb. red kidney beans, dried
Ham bone with generous amt. of meat
1 lg. onion, chopped
2 cloves garlic, chopped
2 bay leaves

Wash beans and set aside. Cook onion and garlic in small amount of oil. Mix ham bone, onion, garlic, beans and bay leaves. Add water until it is about 2 inches above beans. As beans cook they will absorb water so you will have to add more. Cook about 3 to 4 hours until beans start to look creamy. Add pepper to taste. Serve over rice. Serves 6 to 8.
