MEXICAN WEDDING CAKE | |
2 c. sugar 2 c. flour 2 eggs 1 lg. can crushed pineapple (unsweetened with juice) 1 tsp. vanilla extract 1 tsp. baking soda 7 oz. chopped walnuts FROSTING: 1 (8 oz.) pkg. cream cheese, softened 1/4 lb. butter, softened 1 c. powdered sugar 1 tsp. vanilla Mix all ingredients together. Pour into 9 x 12 inch or 13 inch greased pan. Bake at 350 degrees for 50 to 60 minutes. Frost with cream cheese frosting. Frosting: Blend cream cheese and butter. Then add sugar and vanilla. Mix until smooth. |
