PINEAPPLE MUFFINS | |
1 egg 1/2 c. milk 1/4 c. oil or melted shortening 1 1/2 c. sifted flour 1/2 c. sugar 2 tsp. baking powder 1/2 tsp. salt 1 (8 oz.) can crushed pineapple, drained Cinnamon & sugar Heat oven to 400 degrees. Grease muffin cups or use paper liners. Beat egg slightly. Stir in oil and milk. Sift dry ingredients together and stir until flour is moistened. Batter should be lumpy. Add pineapple. Fill cups 2/3 full. Sprinkle with cinnamon sugar. Bake 20 to 25 minutes. Makes 12 muffins. (You can substitute 1 cup blueberries for pineapple.) |
