MACADAMIA CHIP COOKIES | |
9 lb. granulated sugar 10 lb. brown sugar 12 lb. butter 5 1/2 oz. baking soda 4 oz. salt 3 lb. 12 oz. eggs 1 qt. honey 8 oz. vanilla 16 lb. 14 oz. high gluten flour 5 lb. 10 oz. cake flour 25 lb. chocolate chips 10 lb. macadamia nuts 4 lb. pecans Cream sugars, butter, soda and salt. Beat in honey, eggs and vanilla. Mix in flours completely then add the chips and nuts. Scale dough into 3 pound pieces. Shape dough into rolls, wrap with paper and refrigerate. Portion each roll into 15 cookies. Recipe may be reduced for home kitchen use. Bake at 350 degrees until done. Yield: 33 - 3 pound rolls. |
