CRISPY OATMEAL COOKIES 
1/2 c. butter, softened
1/2 c. brown sugar, packed
1/2 c. sugar
1 egg
2 tsp. orange juice (fresh)
1/2 tsp. vanilla extract
3/4 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 c. quick-cook oats, uncooked
1/2 c. nuts, chopped

Cream butter; add sugars, beat well. Add egg, orange juice and vanilla. Mix well. Combine flour, soda and salt in small bowl. Add to creamed mixture and mix well. Stir in oats and nuts. Spoon 1/2 of mixture onto waxed paper and form into a log. Use other half to bake or freeze for later. Bake at 350 degrees for 10 minutes. Can be frozen.
