CABBAGE NOODLES 
1 med. size head of cabbage, trimmed & shredded
2 tbsp. salt
4 tbsp. butter
Freshly ground black pepper
1 lb. square shaped egg noodles

UTENSILS:

4 sided grater or food processor
Mixing bowl
3 qt. heavy saucepan with a lid
Wooden spoon
5 qt. saucepan
Colander
To serve: Heated vegetable dish

Put the shredded cabbage into the bowl. Add the salt and toss to distribute evenly. Leave for 1 hour and squeeze to remove the liquid.

Melt the butter in the saucepan. Add the cabbage and season with black pepper. Toss to distribute these ingredients evenly. Cover and cook over very low heat for 20 minutes, or until the cabbage is tender, taking great care not to let it burn.

In the meantime, fill the large saucepan with boiling salted water. Add the noodles and cook for 10 minutes. Drain through a colander and add to the cooked cabbage. Serve as you would regular noodles. Delicious! A family favorite
