CHEESECAKE PUFFS 
2 (8 oz.) pkgs. cream cheese
2 eggs
3/4 c. sugar
1 tbsp. lemon juice
1 tsp. vanilla
1 can pie filling (cherry, strawberry or blueberry)
Vanilla wafers

Allow cream cheese and eggs to reach room temperature. Mix cream cheese, eggs, sugar, lemon juice and vanilla. Line muffin pan with paper baking cups and place a vanilla wafer in the bottom of each cup. Fill cups with mixture about 2/3 full. Bake at 325 degrees for 25 to 30 minutes or until center is firm. Allow to cool and add topping. Makes about 24.
