HOMEMADE BREAD IN COFFEE CANS
1 1/2 cups flour
1 pkg. active dry yeast
1/2 cup water
1/2 cup milk
1 1/2 cups flour
1/2 cup (scant) vegetable oil or butter
1/4 cup sugar
1 tsp. salt

Grease 2 coffee cans with plastic lids or 1 (2 lb) loaf pan.

Mix 1 1/2 cups flour and yeast. Combine water, milk and oil/butter in saucepan; heat to lukewarm (110°F). Stir into flour mixture. Stir in sugar and salt. Beat well.

Add another 1 1/2 cups flour, beat until smooth and elastic. Pour into 2 well greased metal 1 lb. coffee cans. Cover with plastic lids. (A 2 lb bread loaf pan may be used instead, covered with plastic wrap.)

Let rise in a warm place until dough touches lid or volume has doubled. Remove plastic covering.

Bake in a preheated 350°F oven for 35 minutes or until top is golden brown. Let stand in pan/cans for 15 minutes. Cool on wire rack.
