ZUCCHINI RELISH 
12 c. ground squash, unpeeled
4 c. ground onion
2 green bell peppers
2 red bell peppers, optional
5 tbsp. salt

Mix above ingredients. Place in colander and drain for 3-4 hours. Make a sauce of: 5 c. sugar 2 tbsp. pickling spice 1 tsp. turmeric 1 tsp. celery seed

Bring to a boil and strain. Pour over squash mixture and mix well. Bring to boil and spoon into pint jars. Makes 8 pints.
