RED CABBAGE | |
2 lb. red cabbage 2 tbsp. fat (Crisco) 2 cooing apples, cored and diced 1 tbsp. sugar 1 onion, grated (optional) 2-4 tbsp. vinegar Salt - water Trim, wash and dice red cabbage. Heat shortening and brown the sugar lightly. Add apple pieces and onion, mix. Add about 1/4 of the cabbage and the vinegar; bring to a boil. Add rest of cabbage, salt, and water to nearly cover the cabbage. Bring to a boil and simmer for approximately 45 minutes, stirring occasionally. (Reduce cooking time and water if you like the cabbage still somewhat firm.) If too much liquid when done, discard some, then adjust taste. |
