STEWED RED CABBAGE 
2 to 4 tbsp. bacon drippings
3 lbs. shredded red cabbage
2 tbsp. sugar
1 tsp. salt
2 tbsp. vinegar
2 tbsp. water

Heat drippings in heavy pan. Add cabbage; stir well until wilted. Cover and simmer until tender (approximately 45 minutes). Add a little water if cabbage seems dry. Before serving, mix sugar, salt, vinegar, and water; combine with cabbage. Taste for seasoning and heat thoroughly.

Green cabbage may be used instead of red cabbage.
