HURRY-UP DINNER ROLLS 
2 1/2 to 3 c. all-purpose flour
2 tbsp. sugar
1 pkg. active dry yeast
1/2 tsp. salt
3/4 c. hot water (120-130 degrees)
1 egg at room temperature
2 tbsp. vegetable oil
2 tbsp. melted butter

Combine 1 cup flour, sugar, yeast, and salt in a bowl. Stir in water, egg, and oil; beat until smooth. Cover; let rise in warm place 15 minutes.

Stir in enough remaining flour to make soft, sticky dough. Turn dough onto a floured board; continue to work in flour until dough can be kneaded. Knead until smooth and elastic, about 3 minutes.

Divide dough into 16 pieces; shape into balls. Place in greased 9-inch square pan; brush tops with melted butter. Cover; let rise 20 minutes.

Bake at 425 degrees for 8-10 minutes. Makes 16 rolls. Can be doubled very easily.
