1 box lemon supreme cake mix 1 box pineapple instant pudding mix 4 eggs 3/4 c. oil 10 oz. 7-Up Mix all ingredients in a large mixing bowl. Beat 3 minutes. Bake at 350 degrees for 20 to 25 minutes. FROSTING: 1 sm. can pineapple, crushed 2 eggs 2 tbsp. flour 1 c. sugar 1 stick butter 1 can coconut (sm.) 2 tbsp. lemon juice Cook over medium heat, stirring constantly. Mix pineapple (undrained), eggs, sugar, flour and butter until thickened. Let cool until lukewarm. Add coconut and lemon juice. Spread on cake. |
