ITALIAN CRUSHED GREEN OLIVES 
1 lb green olives
1/4-1.2 c. salt
Olive oil
Oregano
1/2 head garlic, crushed

Additional vegetables:

Celery
Carrots
Pe ppers
Cauliflower (optional)

Note: Make at least 3 pounds at a time.

Crush olives with the bottom of a drinking glass. Wash. Put in a jar with 1/4 to 1/2 cup salt and water to cover. In 24 hours, rinse and add fresh salt and water. Do the above step 3 or 4 times until olives start to darken. Rinse olives and dress to taste with olive oil, oregano and 1/2 large head of garlic. Crush the garlic cloves. Add celery, peppers, carrots, cauliflower, if desired. Let stand 1 or 2 weeks.
