OLD FASHIONED POTATO SOUP 
2 quarts raw potatoes, pared
3 leeks or 1/4 cup chopped onion
2 quarts boiling water
2 tsps. salt
1/2 cup butter
2 Tbsps. flour
2 quarts milk
2 Tbsps. parsley

Put potatoes and onion through food chopper, or chop fine. Cook in the boiling water with the salt until potatoes and water are thick. Melt butter, add flour, stir until smooth and add the milk. Cook until thickened and smooth. Add potato mixture and chopped parsley.
