IMPOSSIBLE PUMPKIN PIE 
3/4 c. sugar
1/2 c. Bisquick baking mix
2 tbsp. butter
1 (13 oz.) can evaporated milk
2 eggs (or equal amount Eggbeaters)
1 (16 oz.) can pumpkin
2 1/2 tsp. pumpkin pie spice
2 tsp. vanilla extract

Heat oven to 350 degrees. Grease pie plate (9 inch or 10 inch). Beat all ingredients until smooth, 1 minute in blender or 2 minutes in mixer. Pour into plate. Bake until knife inserted in center comes out clean approximately 50 to 55 minutes.
