FLOUNDER SALAD 
1 lb. frozen flounder
1 onion
1/2 lb. carrots
3 potatoes
Salt, pepper
Water
Mayonnaise
Lettuce leaves
Tomatoes

Place fish, vegetables, and seasoning in pan with enough water to cover. Cook for 1 hour. Drain off most of the liquid and mash vegetables and fish together. Mix in mayonnaise and add seasoning as desired. Serve on bed of lettuce and surround with tomatoes.
