FLOUNDER SUPREME 
6 flounder fillets, preferably fresh
1 lemon
3 tbsp. unsalted butter
Salt and freshly ground pepper to taste
1/2 lb. fresh mushrooms, thinly sliced
1/2 c. heavy cream

Preheat oven to 350 degrees. Place fillets in shallow baking dish. Squeeze lemon juice over fillets. Dot with butter. Sprinkle with salt and freshly ground pepper. Scatter mushrooms on top. Drizzle cream over all. Bake 20 minutes.
