CRAB CROSTINI | |
6 oz. cooked lump crabmeat 1/2 c. diced red bell pepper 2 tbsp. + 2 tsp. reduced calorie mayonnaise 2 tbsp. chopped fresh flat leaf parsley 1 tbsp. chopped fresh chives 1 tbsp. fresh lime juice 1 tbsp. Dijon mustard 2 tsp. grated Parmesan cheese 4 to 5 drops liquid red pepper sauce 4 oz. Italian bread, cut into 16 slices Preheat broiler. Pick over crabmeat to remove cartilage. In medium bowl, combine all ingredients except Italian bread; blend well. Spread 1 tablespoon crab mixture on each bread slice; place slices on broiler rack. Broil 4 inches from heat 5 to 6 minutes, or until lightly browned. Makes 8 servings. |
