MEXICO: CRISPS 
Large shells (taco soft)
Cheddar cheese (mild)
Mozzarella cheese
Onion
Tomato
Salsa

Heat oven to 350 degrees. Place shells on cookie sheet; sprinkle half with cheddar cheese and Mozzarella cheese. Add onion and tomato if desired; fold over (in half), bake until slightly crisp. Cut lengthwise strips and spread salsa over top.
