BEST FRIED RICE EVER 
Approximately 2 cups cooked white rice
3 or 4 tbsp. sesame oil
1 cup thawed, frozen peas and carrots
3 or 4 chopped green onions
1 small yellow or white onion
1 tbsp. chopped garlic
1/4 (or less) cup soy sauce
2 slightly scrambled eggs
1 cup chopped shrimp, chicken, pork (optional)

In a large skillet, heat oil to medium hot. Lightly sauté onion, garlic, peas and carrots in sesame oil. Take it out and put aside while you lightly sauté seafood and shrimp (if adding). Set this aside with the other vegetables.

Lightly scramble eggs in the now empty pan, then add the rice and the soy sauce and vegetables and any sautéed meat you may have.

Enjoy it. It's the best I've ever made. Super Easy!

My go to fried rice recipe! Can be halved for when it's just you and your plus one. Agree that a bit of ginger (either fresh or powdered) really wakes up the dish.

This is the best chicken fried rice I have ever made! I amped it up with a tablespoon of hoisin & fish sauce plus 4-5 sliced mushrooms.. I made a big amount of rice pilaf yesterday with intent of using it tonight, but never cut back on veggies. This is now my go to rice on our monthly Chinese food night. Thank you for the recipe. :)

Made this tonight using some pork loin I cooked earlier and some Patagonian shrimp meat purchased for this dish. House smelled like a Chinese restaurant! Easy and will make again.
