BANANA MUFFINS 
1/3 c. shortening
1/3 c. sugar
2 eggs
1 3/4 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/4 c. mashed ripe bananas
1/2 c. walnuts, chopped

Cream shortening and sugar until light. Add eggs and mix well. Combine dry ingredients and add to shortening mixture, alternately with mashed bananas. Fold in chopped nuts. Grease muffin tin, only on the bottom of 12 cups. Fill muffin tins about 2/3 full. Bake at 350 degrees for about 25-30 minutes. Do not over bake. Makes 12 regular size muffins.
