BANANA MUFFINS 
3 lg. ripe bananas
1 c. sugar
1 egg, slightly beaten
1 1/2 c. flour
1 tsp. baking soda
1 tsp. baking powder
3/4 tsp. salt
1/3 c. vegetable oil
1/2 c. chopped walnuts (optional)

Grease a dozen muffin tins (or use paper liners). Mash bananas in large bowl. Mix in sugar and egg. Set aside. Sift together flour, baking soda and powder and salt. Add to banana mixture alternately with oil until combined. Stir in walnuts. Bake until golden brown about 20-25 minutes at 350 degrees.

Serves 12.
