ZUCCHINI LASAGNA FOR TWO 
2 zucchini, 1/2 lb.
1/2 c. Ricotta cheese
1 tomato, sliced
1/4 c. finely chopped onion
2 tbsp. flour
1/4 tsp. each salt, thyme & basil
1/2 c. grated Mozzarella cheese
1/4 c. grated Parmesan cheese

Slice zucchini into 1/8" slices. Place half into a 1 quart baking dish. Top with Ricotta cheese and tomato slices and onion. Sprinkle with the flour, thyme, basil and salt. Cover with remaining zucchini slices. Sprinkle with cheeses. Bake in 350 degree oven for 40 minutes. Recipe can be doubled.
