LEMON JELLO CAKE 
1 1/2 c. pineapple juice
3/4 c. applesauce
8 egg whites
1 yellow cake mix
1 sm. lemon jello
2 tsp. grated lemon rind

GLAZE:

1 1/2 c. powdered sugar
1/2 c. lemon juice

Simmer pineapple juice until reduced to 3/4 cup. Mix applesauce and egg whites in a large bowl. Stir in cake mix, Jello and rind. Slowly drizzle in reduced juice. Beat 5 minutes. Pour into 8 1/2 x 11 inch loaf pan which has been sprayed with Pam. Bake at 350 degrees for 30-40 minutes.

Glaze: Mix powdered sugar and lemon juice. When cake is done poke holes in it while hot and drizzle on glaze. Calories 303 per serving. Fat 4. Cholesterol 0.
