Clean 1 (10 or 12 oz.) catfish. Rub salt and pepper inside and out. Sprinkle onion flakes on outside. Wrap in foil, put in baking dish and bake in 350 degree oven for about 45 minutes to 1 hour or until cooked thoroughly. Pull aluminum foil back and let brown. Serves 1.
