SURPRISE SALAD 
1 bunch leaf lettuce, torn in bite-size pieces
1/2 c. walnuts
1/2 c. Feta cheese
6 large strawberries, sliced thin
1 small jicama, peeled and julienned

Dressing:

1/4 c. olive oil
2 tbsp. sugar
1/2 tsp. salt
2 tbsp. balsamic vinegar
1 tbsp. snipped parsley
pepper

Mix dressing in covered container and shake well. Place lettuce, strawberries and jicama in a large salad bowl, toss with dressing. Arrange salad on 6 to 8 salad plates. Top with Feta cheese and walnuts. Serve immediately. For an interesting flavor/texture combination, add 2/3 cup bean sprouts.

Serves 6 to 8.
