ZUCCHINI BREAD 
4 eggs
2 c. sugar
1 c. oil
3 1/2 c. flour
1 1/2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. cinnamon
3/4 tsp. baking powder
2 c. grated, peeled zucchini
1 c. raisins or chopped dates
1 c. granola cereal
1 tsp. vanilla
1 c. chopped walnuts

Combine eggs, sugar and oil; add to mixed dry ingredients. Fold in zucchini, nuts, raisins, and cereal. Add vanilla. Pour into 2 loaf pans and bake in preheated 350 degree oven for 55 minutes. After cooling, the bread may be wrapped well and frozen.
