ZUCCHINI FRUIT BREAD 
3 eggs
1 c. oil
2 c. sugar
1 tsp. vanilla extract
3 c. all purpose flour
1 tsp. baking soda
3 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. salt
1/2 tsp. baking powder
2 c. grated zucchini
1/2 c. dark raisins
1/2 c. dates
1/2 c. pecans
1/2 c. Nestles semi-sweet chocolate chips
1/2 c. quartered maraschino cherries

Mix eggs, oil, sugar, and vanilla extract. Add and mix flour, soda, cinnamon, nutmeg, salt, and baking powder. Add zucchini. Cook raisins 3 minutes, drain and dry on paper towels. Then add the fruits and chips. Coat raisins and dates with a little flour. Add all to the zucchini batter. Pour into 2 loaf pans or a bundt pan. Bake at 350 degrees for 1 full hour, 1 1/2 hours for bundt pan. Remove immediately from pans. Place on wire rack to cool. Refrigerate or freeze.
