ZUCCHINI-FRUIT BREAD 
2 c. sugar
2 c. grated zucchini
1 c. vegetable oil
3 eggs, beaten
3 c. flour, all-purpose
2 tsp. baking soda
3/4 tsp. nutmeg
1/2 tsp. cinnamon
1/4 tsp. baking powder
1 c. chopped pecans
1 c. raisins
1 (8 oz.) can crushed pineapple, drained

Lightly mix sugar, zucchini and oil. Add eggs, mix well. Combine flour, soda, nutmeg, cinnamon, and baking powder. Gradually add to egg mixture, blending thoroughly. Stir in pecans, raisins, and pineapple. Pour into two greased and floured loaf pans. Place in 350 degree oven and bake for 50 minutes or until done.
