ZUCCHINI BREAD | |
1 c. oil 3 eggs 2 c. sugar 2 tsp. vanilla 3 c. flour 1 tsp. salt 1/4 tsp. baking powder 1 tsp. baking soda 3 tsp. cinnamon 2 c. shredded unpeeled zucchini 1 c. dates 1 c. walnuts Combine first 4 ingredients together. Add dry ingredients, then stir in zucchini, dates, and walnuts. Bake in a greased angel food or bundt pan at 325 degrees for 1 hour and 20 minutes. Cool 45 minutes before removing from pan or baked in 2 loaf pans or 3 (1 pound) coffee cans. I like Butter Cream Frosting over the bread, making it more cake like. It's a very nice treat. |
