ZUCCHINI BREAD 
3 eggs, well beaten
1 c. oil
2 c. sugar
2 c. zucchini, grated
3 tsp. vanilla
3 c. flour
1 tsp. salt
1/4 tsp. baking powder
1 tsp. baking soda
3/4 c. tsp. nutmeg
3 tsp. cinnamon
1 c. chopped nuts

Mix together first 5 ingredients. Add remaining ingredients. Grease and flour 2 bread loaf pans. Divide batter into each. Bake at 325 degrees for 1 hour.
