ZUCCHINI CAKE OR BREAD 
3 c. raw zucchini, peeling and all
3 c. sugar
1 1/2 c. cooking oil
4 eggs
1/2 tsp. salt
1 c. chopped nuts
3 c. flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. vanilla

Mix sugar and oil together. Add eggs and zucchini. Mix in 3 of the wet ingredients. Sift dry ingredients and add to the wet mixture. Add nuts. Bake in greased and floured pan at 350 degrees for 1 1/2 hours. Watch at 1 hour and 15 minutes. While hot you can wrap in foil and put in freezer if you want.

ICING:

8 oz. Philadelphia cream cheese
3/4 c. stick butter
1 (1 lb.) powdered sugar
2 tsp. vanilla

Mix together and spread on cake.
